Traditional Horchata is made with rice in Mexico and Chufa (tiger nuts) in Spain. This post will share with you my unique and tropical twist on this favorite drink. Here is my recipe for Thieves Coconut Horchata
Ingredients
- 2 quarts filtered water
- 1 cup organic jasmine rice (where to buy)
- 1 tablespoon vanilla extract (where to buy)
- 3/4 cup organic maple syrup (where to buy)
- 1 cup shredded organic raw coconut (where to buy)
- 1-2 drops of Thieves Essential Oil (where to buy)
- ground cinnamon (where to buy)
- Nut Bag (where to buy)
- Food Processor (where to buy) or high powered blender (where to buy)
Directions
Combine water, rice, coconut, vanilla, Thieves and 1/4 cup of maple syrup in a large glass container. Stir to combine then refrigerate for 8 hours or overnight. Pour mixture into blender. Blend until smooth. Strain mixture through a sieve, cheesecloth or nut bag into a large pitcher and discard pulp. Serve coconut horchata over ice and sprinkle with cinnamon (optional).
