When it comes to cooking in the Summer I am always looking for easy, healthy recipes that requires as little work as possible! Who wants to spend time in the kitchen when the weather is warm and the outdoors are calling. We had a get together with some friends and I was looking to bring something simple and refreshing for everyone to enjoy. I came across this recipe on Pinterest that had the unlikely combination of pineapple and cucumber. I was so intrigued and couldn’t wait to try. It came out absolutely delicious! Here is the recipe for Pineapple Cucumber Salad

Pineapple Cucumber Salad

  • 1 Cubed Pineapple
  • 1 Cubed Cucumber
  • 1/2 Lime Juice & Zest
  • Handful Chopped Cilantro
  • Salt & Pepper to taste

Mix all the ingredients in a bowl and serve immediately or let it chill in the fridge till you are ready to eat it. This recipe was so fresh and delicious. It was very easy to make and such a great combo with the pineapple and cucumber, which I have never experienced together before this recipe. I brought it to a potluck and it was well received by all! Everyone loved it, including kids! This salad will be making a regular appearance at potlucks, BBQ’s and home cooked meals in our house! I hope you enjoy it!
